Monte Cristo Mini Waffles
Monte Cristo Mini Waffles: the perfect combination of savory and sweet.
When Brian and I were dating we would frequent a local waffle house. Their specialty was over the top cake batter waffles. These waffles were so good that we even made a pitstop before leaving on our honeymoon. One of our favorites was the Monte Cristo. A classic buttermilk waffle topped with a ham steak, swiss cheese and two fried eggs.
This adaptation of the Monte Cristo features our favorite homemade mini waffle.
Mini Waffles
1 cup Flour
1 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 egg
1 cup milk
2 tbs[ melted butter or vegetable oil
In a medium bowl, combine flour, sugar, baking powder, and salt. Whisk in the egg, milk, and melted butter until just incorporated.
Pour 1/4 cup of batter into greased waffle maker (we used a Dash mini waffle maker) and cook until golden brown. Repeat with remaining batter.
For Monte Cristo Mini Waffles top with cooked ham, melted Swiss and a fried egg.
